How to milk almonds (and get cacao orbs out of them too)

Back in the days, when we decided to give up dairy, we got into making stuff from scratch.  So as you can probably guess from the title of this post, making milk was part of the list, but it didn’t turn well so we gave up and kept on buying almond milk from the shop.

Until about a month ago I found a recipe by Kimberly Snyder which I thought I’d try. Here is what I did:

First soak the almonds. Overnight or overday (can you say that?), whatever works best for you

 

Then rinse them thoroughly

Put the almonds in the blender with a couple of cups of water

Blend

Blend the shit out of them

Filter the almond milk with a nut bag. You can also use an old piece of fabric, but make sure it's clean.

Almond pulp

This is the almond pulp, keep it!

Almond milk in blender

Put the almond milk back in the blender (after you rinsed it. The blender)

Soy lecithin

Add a tablespoon of soy lecithin (this is going to make your milk creamy)

date syrup

Add a tablespoon of sweetener (I use date syrup)

Coconut oil

Add a tablespoon of coconut oil

Hymalayan salt

Add a pinch of salt

blend again

Add a teaspoon of vanilla extract (I didn't have any that day) and blend again

bottled milk

bottle your milk and put it in the fridge. Kimberly Snyder says it keeps for a week but in my experience, after 2 days it goes sour, Kimberly you are welcome to share your milk longevity secrets on here.

Almond pulp

And now, on to tackle the pulp and make coco orbs

Put the almond pulp and a big handful of dates (I like to chop them beforehand) in the food processor. You can adjust the amount of dates after to find the right consistency.

Raw cacao powder

Add a good tablespoon of cacao powder (I use the raw version, cause it's better for you)

goji berries

Time to empty the cupboards, add whatever you have: goji berries, peanut butter, cacao nibs, sunflower seeds...

process

Process the whole thing until you get a sticky paste (if your food processor sucks as bad as mine, you might want to finish with your hands. And then lick them)

coco ball

Form balls...

covered in coconut

And roll them in dessicated coconut (or sesame seeds, or cacao powder...)

    Han mais tu vas me tuer si tu sais que je jette les résidus de noisettes et amandes…
    J’savais pas quoi en faire, mais du coup, avec tes photos ça me donne des idées ! FINI le gaspillage, je garderai tout pour me faire des boules énergétiques :)

    Ah oui c’est clair que tu tiens pas a ta vie Laura pour me dire des choses pareils!
    Et puis si t’as un juicer et que tu te fais des jus de fruits/legumes, tu peux recuperer la pulpe, la melanger avec de l’avocat ecrase, un peu de sel, un peu de jus de citron et hop sur une tartine!
    Je suis comme ca moi, je recycle tout!

    Bon ben sur ce je vais tenter le lait de noisettes moi tient…

    Mon juicer est dead, trop dégoutée :(

    J’ai testé le lait de cacahuète, c’est très bon et avec une banane et de la caroube, c’est une tuerie.
    J’ai de la poudre de Maca qui devrait arriver sous peu, si tu as des idées… ;)
    Puis j’ai plusieurs recettes raw à publier, un plat et un autre dessert ah et une boisson aussi ♥♥
